  • 3 tablespoons (40g) granulated sugar (brown sugar or coconut sugar)
  • 2 teaspoons ground cinnamon
  • 1 tablespoon (8g) all-purpose plain flour (or gluten-free flour)
  • 45 apples (of choice, cored, note 3)
  • Dash of lemon juice (optional)
  • 2 tablespoons (30g) vegan butter or coconut oil (melted)
  • 3 tablespoons (60g) apricot jam (any light-colored jam)

Instructions

  1. Prepare the Tart Pan: Grease a 9-inch (23 cm) loose-bottom tart pan to prevent the pastry from sticking during baking.
  2. Make the Pastry: In a medium bowl or food processor, combine the flour, chilled vegan butter, and sugar, mixing until just combined. Add the cold water one tablespoon at a time, mixing until the dough forms and comes together.
  3. Roll Out the Pastry: On a floured surface, roll the pastry into a large circle about 1/4 inch (5 mm) thick to fit the tart pan.
  4. Form the Crust: Transfer the pastry to the tart pan and press it snugly against the base and sides. Trim off any excess dough. Patch any holes with remaining dough or press the dough directly into the pan to shape the crust evenly.
  5. Blind Bake Preparation: Prick the base of the tart shell with a fork. Line the crust with parchment paper or aluminum foil and fill with pie weights or dried beans/rice/lentils. Chill the tart in the fridge to set the shape.
  6. Mix Cinnamon Sugar: In a small bowl, combine the sugar and cinnamon. Divide the mixture in half and add 1 tablespoon of flour to one half, mixing well. Set aside both mixtures.
  7. Slice Apples: Using a sharp knife or mandoline slicer, thinly slice the apples to about 1/8 inch (3 mm) thickness. Optionally, toss apple slices lightly with lemon juice to prevent browning.
  8. Preheat Oven: Set the oven to 180°C (350°F) to prepare for baking.
  9. Blind Bake Crust: Bake the tart shell with weights for 10-15 minutes until partially cooked. Remove the weights and parchment once cool enough, leaving the shell ready for filling.
  10. Add Filling Base: Sprinkle the flour-cinnamon sugar mixture evenly over the parbaked tart crust to absorb moisture from the apples.
  11. Arrange Apples: Neatly arrange the apple slices closely on the tart base, as they will shrink during baking.
  12. Brush with Butter: Generously brush the melted vegan butter or coconut oil over the apple slices and drizzle any leftover butter on top.
  13. Sprinkle Remaining Sugar: Sprinkle the remaining cinnamon sugar mixture over the apples for extra flavor and sweetness.
  14. Bake the Tart: Bake for 45 to 55 minutes until the apples are tender, the filling is bubbling, and the crust is golden.
  15. Glaze Tart: While still warm, brush the tart with apricot jam using a pastry brush to give a glossy finish and added sweetness.
  16. Serve: Allow the tart to cool slightly, then cut with a sharp knife (and scissors if needed). Serve warm or at room temperature, optionally with ice cream, whipped cream, or dairy-free yogurt.
