Ingredients

Scale

Cookie Dough

  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 1 cup brown sugar (packed)
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 tablespoon instant coffee granules (dissolved in 1 tablespoon hot water)
  • 1/2 cup chocolate chips (optional)

Mascarpone Frosting

  • 1 cup mascarpone cheese (softened)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream (chilled)
  • 2 tablespoons cocoa powder (for dusting)

Instructions

  1. Prepare the Cookie Dough: Preheat the oven to 350°F (175°C). In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract and dissolved coffee.
  2. Combine Dry Ingredients: In a separate bowl, whisk together the flour and baking powder. Gradually add this mixture to the wet ingredients and mix until just combined. Fold in chocolate chips if using.
  3. Shape and Bake Cookies: Using a cookie scoop, drop the dough onto a baking sheet lined with parchment paper. Bake for 12-15 minutes, or until the edges are lightly golden. Remove from oven and allow cookies to cool completely.
  4. Make the Frosting: Beat the mascarpone cheese in a mixing bowl until smooth. Gradually add powdered sugar and vanilla extract, mixing until well combined. In a separate bowl, whip the chilled heavy cream until stiff peaks form, then gently fold it into the mascarpone mixture until smooth.
  5. Assemble the Cookies: Spread a generous layer of the mascarpone frosting on the bottom of one cookie and sandwich it with another cookie. Dust the tops with cocoa powder before serving.

Notes

  • For an extra mocha flavor, soak the cookie dough with a little more dissolved instant coffee.
  • Chocolate chips are optional but add a nice texture and flavor contrast.
  • Ensure cookies are completely cooled before assembling to prevent frosting from melting.
  • Store assembled cookies in the refrigerator and consume within 2-3 days for freshness.
  • Use chilled heavy cream for best whipping results.
