Butter & Garlic Mixture

  • ¼ cup melted butter
  • 2 teaspoons minced garlic

  • Salt and pepper to taste

Instructions

  1. Prepare the smoker. Start your smoker and set the temperature to 350 degrees Fahrenheit to ensure a perfect slow cooking environment for the potatoes.
  2. Slice the potatoes. Cut each potato into approximately 8 thin slices, taking care not to cut all the way through by placing chopsticks on each side of the potato to act as a stopper.
  3. Butter and garlic application. Place each potato on a heavy-duty aluminum foil sheet sized about 14” x 12”. Combine the melted butter with minced garlic and brush generously over the potato slices, making sure the mixture seeps between each slice.
  4. Wrap and smoke the potatoes. Wrap each prepared potato tightly in foil and place them inside the smoker. Smoke for about 40 minutes, or until the potatoes are fork tender.
  5. Add cheese and finish smoking. Remove the foil from around the potatoes, slice the cheddar cheese into 8 pieces each, and place a slice between each potato cut. Return the potatoes to the smoker, unwrapped, allowing the cheese to melt completely.
  6. Garnish and serve. Remove the potatoes from the smoker, sprinkle with chopped chives, season with salt and pepper if desired, and serve immediately for the best flavor and texture.
