Potatoes
- 4 medium sized Russet potatoes, washed and dried
Butter & Garlic Mixture
- ¼ cup melted butter
- 2 teaspoons minced garlic

- Prepare the smoker. Start your smoker and set the temperature to 350 degrees Fahrenheit to ensure a perfect slow cooking environment for the potatoes.
- Slice the potatoes. Cut each potato into approximately 8 thin slices, taking care not to cut all the way through by placing chopsticks on each side of the potato to act as a stopper.
- Butter and garlic application. Place each potato on a heavy-duty aluminum foil sheet sized about 14” x 12”. Combine the melted butter with minced garlic and brush generously over the potato slices, making sure the mixture seeps between each slice.
- Wrap and smoke the potatoes. Wrap each prepared potato tightly in foil and place them inside the smoker. Smoke for about 40 minutes, or until the potatoes are fork tender.
- Add cheese and finish smoking. Remove the foil from around the potatoes, slice the cheddar cheese into 8 pieces each, and place a slice between each potato cut. Return the potatoes to the smoker, unwrapped, allowing the cheese to melt completely.
- Garnish and serve. Remove the potatoes from the smoker, sprinkle with chopped chives, season with salt and pepper if desired, and serve immediately for the best flavor and texture.
