Ingredients

Scale

Starter Mixture

  • 160 g active sourdough starter
  • 245 g warm water
  • 40 g granulated white sugar

Dry Ingredients

  • 330 g bread flour
  • 30 g Dutch process cocoa powder
  • 1/2 tablespoon espresso powder
  • 6 g coarse kosher salt

Add-ins

  • 40 g chopped walnuts
  • 70 g chocolate chunks

Instructions

  1. Start The Dough: Mix 160 g of active and bubbly sourdough starter with 245 g of warm water and 40 g of granulated white sugar in a large bowl. Stir well until the mixture is mostly combined and smooth.
  2. Combine Dry Ingredients: In a separate medium bowl, whisk together 330 g bread flour, 30 g Dutch process cocoa powder, and 1/2 tablespoon espresso powder until evenly combined.
  3. Make Dough: Add the dry ingredient mixture to the wet starter mixture. Stir until a shaggy dough forms, then use your hands or a bowl scraper to mix until fully combined into a cohesive dough.
  4. Rest and Fold: Cover the bowl tightly with plastic wrap or a shower cap and let the dough rest for 30 minutes to hydrate.
  5. Salt and First Stretch and Fold: Sprinkle 6 g kosher salt on top of the dough. With wet hands, perform a series of stretch and folds by pulling a flap of dough and folding it over, then rotating the bowl 90 degrees and repeating four times total. Cover and let rest for another 30 minutes.
  6. Add Walnuts and Chocolate + Second Stretch and Fold: Add 40 g chopped walnuts and 70 g chocolate chunks to the dough. Incorporate them using a second set of stretch and folds as before. Allow the dough to rest for 30 minutes.
  7. Third Stretch and Fold: Perform a final third set of stretch and folds to further develop gluten and evenly distribute inclusions. Let dough rest for 1 hour after this.
  8. Preshape the Dough: Lightly flour a work surface and turn the dough out with the smooth side down and sticky side up to make shaping easier. Fold the edges into the middle like lacing, then roll from the bottom tightly into a batard shape. Optionally, tuck ends underneath to form a boule shape.
  9. Bench Rest: Let the shaped dough rest, covered, for 20 minutes to relax the gluten.
  10. Final Shaping: Place your hands underneath the dough and use your pinkies to gently drag it along the work surface to create surface tension. Avoid over-tightening to prevent tearing the walnuts and chocolate.
  11. Prepare for Proofing: Dust the top of the dough with rice flour using a sieve. Using a bench scraper, pick up the dough and flip it so that the seam side is facing up. Place the dough inverted into a banneton basket to proof until it is airy and well-risen.

Notes

  • Ensure your sourdough starter is very active and bubbly for best rise and flavor development.
  • Use Dutch process cocoa powder for a richer, deeper chocolate taste and better dough color.
  • Espresso powder enhances the chocolate flavor without making the bread taste like coffee.
  • Perform stretch and folds with wet hands to prevent the dough from sticking.
  • Do not overtighten the dough during final shaping to avoid tearing the inclusions.
  • Proofing times may vary based on room temperature; look for a noticeable increase in dough volume and airiness.
  • For baking instructions, refer to your preferred sourdough bread baking method after proofing (not included in this recipe).
