Cupcake Batter

  • 240g of self-raising flour
  • 50g of caster sugar
  • 1/2 teaspoon of bicarbonate of soda
  • 1/2 teaspoon of baking powder
  • 60ml of sunflower oil
  • 50g of vegan rainbow sprinkles

Buttercream Frosting

  • 250g of dairy-free butter (block style, room temperature – not spreadable)
  • 300g of powdered/ icing sugar
  • 1 teaspoon of vanilla extract / vanilla bean paste
  • Splash of dairy-free milk (if needed)
  • Vegan rainbow sprinkles (hundreds and thousands) for decoration

Instructions

  1. Prepare the vegan buttermilk: In a small bowl, combine the dairy-free milk with the apple cider vinegar and whisk until fully combined. This mixture acts as a vegan buttermilk. Add in the vanilla extract or vanilla bean paste and mix well.
  2. Preheat oven and prepare tins: Preheat your oven to 180ºC fan (350ºF) and line a cupcake tin with cupcake cases. This recipe yields approximately 8-10 small to medium cupcakes.
  3. Mix dry ingredients: In a large mixing bowl, sift together the self-raising flour, caster sugar, baking powder, and bicarbonate of soda. Stir to combine evenly.
  4. Combine wet ingredients: Add the sunflower oil to the vegan buttermilk mixture and whisk until fully incorporated.
  5. Make the batter: Pour the wet ingredients into the dry and gently fold together until a smooth batter forms. Avoid overmixing to keep the cupcakes light.

  12. Pipe frosting: Transfer the buttercream to a piping bag fitted with a large round tip nozzle and pipe a tall swirl of buttercream atop each cupcake.
  13. Set frosting for decorating: Line a tray or board with greaseproof paper, then carefully place the frosted cupcakes upside down on it so the buttercream touches the paper. Freeze until the frosting is firm enough to peel off cleanly, forming a flat surface for the sprinkles.
