Ingredients

Scale

Chicken Salad

  • 3 cups cooked chicken breast (shredded or cubed)
  • 1 large English cucumber (seeded and diced small)
  • 0.25 cup red onion (finely diced)
  • 0.25 cup Kalamata olives (halved)
  • 3 tbsp fresh dill (chopped)
  • 2 tbsp fresh parsley (chopped)
  • 0.25 cup crumbled feta cheese

Tzatziki Dressing

  • 1 cup plain Greek yogurt
  • 0.25 cup cucumber (grated and squeezed dry)
  • 2 tbsp fresh lemon juice
  • 1 tbsp olive oil
  • 2 cloves garlic (minced)
  • 2 tbsp fresh dill (chopped)
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. Make the tzatziki dressing: In a bowl, whisk together the plain Greek yogurt, grated and squeezed-dry cucumber, lemon juice, olive oil, minced garlic, fresh dill, salt, and pepper until the mixture is smooth and thick. If the dressing looks loose, squeeze any excess liquid from the grated cucumber before whisking; the dressing should be thick enough to coat the back of a spoon.
  2. Assemble the chicken salad: In a large bowl, combine the cooked chicken breast, diced English cucumber, finely diced red onion, halved Kalamata olives, chopped dill, and chopped parsley. Gently fold the tzatziki dressing into the chicken mixture until everything is evenly coated without breaking up the chicken too much.
  3. Adjust seasoning: Taste the salad and adjust the lemon juice, garlic, or dill as desired to achieve your preferred brightness and flavor balance.
  4. Chill: Refrigerate the tzatziki chicken salad for at least 30 minutes to allow the flavors to meld together.
  5. Serve: Before serving, top with crumbled feta cheese and extra fresh dill. Enjoy the salad in lettuce cups, stuffed in pita bread, or served over a bed of fresh greens.

Notes

  • Ensure to squeeze out excess water from the grated cucumber to prevent a watery dressing.
  • This salad can be prepared ahead and stored refrigerated for up to 2 days for best flavor.
  • For a spicier kick, add a pinch of crushed red pepper flakes to the dressing.
  • Use cooked chicken breast leftover from a previous meal or rotisserie chicken for convenience.
  • Serve chilled for optimal flavor and freshness.
