Instructions

Gently fold the mixture to keep some crab meat chunks intact. Cover and refrigerate for at least 30 minutes to allow flavors to meld and to firm the filling.
  2. Prepare the Salmon: Preheat oven to 375°F (190°C). On a clean cutting board, place each salmon fillet skin-side down. Carefully slice a horizontal pocket about three-quarters through each fillet without cutting all the way through. Season both sides of the fillets with salt and pepper.
  3. Stuff the Salmon: Using about 1/4 cup of the chilled filling, gently stuff each pocket in the salmon fillets. Be careful not to overfill or spill over the edges.
  4. Sear the Salmon: Heat olive oil in an oven-safe skillet over medium-high heat until shimmering. Place the stuffed salmon fillets skin-side down and sear for about 4 minutes until the skin is crisp and golden brown.
