Instructions

  1. Prepare the Ganache: Melt the dark chocolate gently using a double boiler or microwave in short bursts, stirring frequently to avoid burning. Allow it to cool slightly.
  2. Mix Ingredients: In a bowl, combine the softened butter, powdered sugar, vanilla extract, and rum. Stir the mixture until smooth and creamy. If making variations, add espresso for coffee-rum balls or orange zest and Cointreau for orange truffles at this stage.
  3. Combine Chocolate and Rum Mixture: Slowly fold the melted chocolate into the rum mixture, stirring continuously until fully incorporated into a smooth ganache.
  4. Chill the Mixture: Cover the bowl with plastic wrap and refrigerate the mixture for at least 2 hours or until firm enough to scoop and roll.
  5. Shape the Truffles: Using clean, cold hands (rinse in cold water to prevent melting), scoop out small portions of the ganache and roll into 1-inch balls.
