Instructions

  1. Reduce Wine: In a saucepan, bring the red wine to a simmer over medium heat and cook for about 10-15 minutes until reduced to about 1 cup. Allow it to cool slightly.
  2. Whisk Egg Yolks: In a bowl, whisk together the egg yolks and granulated sugar until pale and thick.
  3. Heat Cream and Milk: In another saucepan, combine the heavy cream, whole milk, and a pinch of salt. Heat over medium heat until just simmering.
  4. Temper Egg Yolks: Slowly pour the hot cream mixture into the egg yolks while whisking constantly to temper. Then return the mixture to the saucepan and cook on low heat, stirring continuously until it thickens enough to coat the back of a spoon (about 5-7 minutes).
  5. Combine and Chill: Remove from heat and stir in the reduced red wine and vanilla extract. Let cool to room temperature, then refrigerate for at least 2 hours until fully chilled.
  6. Churn the Ice Cream: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
  7. Freeze: Transfer the churned ice cream to a freezer-safe container and freeze for at least 4 hours until firm.
