- 2 medium sweet potatoes, peeled and diced
Zucchinis:
- 2 medium zucchinis, diced

- Preheat the Oven: Set your oven to 400°F (200°C) and grease a large baking dish with olive oil. This will help everything cook evenly and prevent sticking.
- Sauté the Veggies: In a large skillet over medium heat, heat the olive oil. Add the diced onion and minced garlic, and sauté for about 3-4 minutes, until the onion is translucent. Your kitchen will smell amazing!
