Ingredients

Scale

Shortbread Layer

  • 1 stick unsalted butter (melted)
  • 1/2 teaspoon sea salt
  • 1/2 cup white granulated sugar
  • 1 egg (room temperature)
  • 1 1/2 cups all-purpose flour

Caramel Peanut Layer

  • 2 cans sweetened condensed milk
  • 1 cup brown sugar
  • 1 stick unsalted butter
  • 4 tablespoons dark corn syrup
  • 1 cup peanuts (roasted)

Chocolate Layer

  • 8 oz chocolate chips
  • 1 cup heavy whipping cream (hot)
  • 1 tablespoon light corn syrup

Instructions

  1. Preheat Oven: Preheat your oven to 350°F to prepare for baking the shortbread base.
  2. Prepare the Shortbread Layer: Line an 8 x 8-inch baking pan with parchment paper, leaving overhangs on two sides for easy removal. In a large bowl, whisk together sea salt and white sugar. Pour the hot melted butter over the mixture and whisk until combined. Add the egg and mix thoroughly. Using a spatula, stir in the flour until just incorporated. The dough will be thick; use your hands if necessary to fully combine.
  3. Bake Shortbread: Press the dough evenly into the bottom of the prepared pan. Poke holes across the surface with a fork. Bake for 15 minutes until set.
  4. Make Caramel Peanut Filling: In a medium saucepan over medium-low heat, combine sweetened condensed milk, brown sugar, butter, and dark corn syrup. Stir continuously for 8-10 minutes until the mixture thickens into a golden caramel, taking care not to boil it. Remove from heat.
  5. Add Peanuts to Caramel: Stir roasted peanuts into the caramel mixture. Pour this evenly over the baked shortbread layer.
  6. Bake Caramel Layer: Return the pan to the oven and bake for an additional 20 minutes. The caramel will thicken and deepen in color.
  7. Cool Layers: Remove from oven and let cool to room temperature to allow the caramel layer to set.
  8. Prepare Chocolate Topping: Place chocolate chips and light corn syrup into a medium bowl. Microwave the heavy whipping cream until hot, then pour over the chocolate. Let it sit for 1-2 minutes before stirring until smooth and glossy. If needed, microwave again briefly to melt any remaining chocolate.
  9. Pour Chocolate Over Caramel: Pour the melted chocolate mixture on top of the caramel layer, smoothing it out evenly.
  10. Chill to Set: Refrigerate the pan for at least 2-3 hours until the chocolate is firm and set.
  11. Serve: Use the parchment paper handles to lift the entire block from the pan. Cut into 30 small bars and enjoy. Store leftovers in an airtight container in the refrigerator for up to 10 days.

Notes

  • Ensure the egg is at room temperature before mixing to avoid curdling the butter.
  • Do not boil the caramel mixture; simmer gently to prevent burning.
  • For easier slicing, chill the bars well before cutting.
  • Use high-quality chocolate chips for a smoother, richer chocolate topping.
  • These bars can be stored in the fridge for up to 10 days or frozen for longer storage.
