Chipotle-Lime Crema

Instructions

  1. Marinate the Chicken: In a large bowl, whisk together olive oil, lime juice, finely chopped chipotle chilis with adobo sauce, garlic powder, and ¾ teaspoon salt until well combined. Add chicken breast strips and toss to coat evenly. Cover and refrigerate for at least 2 hours or up to overnight.
  2. Cook the Chicken: Heat a large skillet over medium-high heat. Remove chicken from the fridge, letting excess marinade drip off. Add chicken strips to hot pan and cook, stirring occasionally, until cooked through, golden brown, and slightly charred on edges, about 5-7 minutes. Ensure internal temperature reaches 165°F (74°C). Transfer to a plate and set aside.
  3. Prepare the Rice: Rinse rice under cold water until water runs clear. In a medium pot, bring 1 ½ cups water to boil, add ¼ teaspoon salt and rinsed rice.
