  • 23 teaspoons (10-15g) aquafaba (brine from a can of chickpeas) or dairy-free milk
  • 1/2 teaspoon activated charcoal powder or a few drops of black food coloring

Apple Monsters

  • 2 green and/or red apples
  • 1/4 cup smooth peanut butter or nut/seed butter of choice
  • 12 strawberries, sliced
  • 1/4 cup pine nuts, or slivered almonds, sunflower seeds, or pumpkin seeds

Banana Ghosts

  • 2 bananas, peeled
  • 1 tablespoon melted vegan chocolate
  • 1/8 teaspoon coconut oil (if needed)

Strawberry Mummies

  • 58 fresh strawberries
  • 1 tablespoon melted vegan white chocolate
  • 1/8 teaspoon coconut oil (if needed)

Other Spooky Fruit

  • 1/2 cup fresh blueberries
  • 1/2 cup fresh seedless grapes, halved (green, red or black)
  • 24 mango cheeks, cut into a criss-cross pattern
  • 24 mandarins, peeled
  • 24 pieces celery, about 3 inches (6 cm) each

Instructions

  1. Make the Candy Eyes: In a small bowl, mix powdered sugar with 2 teaspoons of aquafaba or dairy-free milk until a thick paste forms that slightly flattens when dropped. If too thick, add a dash more liquid. Using a piping bag fitted with a small round tip, pipe 30-40 small circles (about 8mm wide) onto parchment paper. Remove remaining icing from the bag, mix in activated charcoal powder or black food coloring, then pipe small black dots in the center of each circle using a piping bag with a very small tip. Let the eyes dry uncovered at room temperature for 1-2 days until firm.
  2. Make the Apple Monsters: Core and quarter the apples. Cut a wedge out of each quarter to create monster mouths. Spread 1-2 teaspoons of peanut butter on the cut-out areas, then place a strawberry slice in the lower half of each mouth. Press pine nuts into the upper half to resemble teeth; if needed, use a toothpick to make indentations to help them stick. Attach candy eyes onto the apple skins using nut butter or melted chocolate as glue.
  3. Make the Banana Ghosts: Cut bananas in half and cut zig-zag patterns on the cut sides. Attach candy eyes using nut butter or melted chocolate as glue. Use a small spoon to draw mouths with melted vegan chocolate.
  4. Make the Strawberry Mummies: Drizzle melted vegan white chocolate over the strawberries. Attach candy eyes; if the white chocolate has set, use a little melted chocolate as glue.
  5. Make Other Spooky Fruit: Attach candy eyes on blueberries, halved grapes, and mango cheeks using melted chocolate or nut butter if needed. Insert celery sticks into the centers of peeled mandarins.
  6. Assemble the Platter: Arrange all the decorated fruits creatively on a large platter or tray. Cover and store in the fridge for a couple of hours before serving. Leftover fruit can be stored in an airtight container in the fridge for 1-2 days.
