Instructions

  1. Soak Pineapple: Place pineapple rings in a medium bowl, cover with dark and coconut rums, and let soak for at least 1 hour. Drain and pat dry.
  2. Prepare Coating: Set up three bowls with flour, coconut flakes, and whisked eggs with coconut milk.
  3. Coat Pineapple: Dip each pineapple ring in flour, then egg mixture, and coat with coconut flakes.
