Ingredients

Scale

Ingredients

  • 3 cups raspberries, fresh or frozen
  • 2 tablespoons lemon juice
  • 2 tablespoons honey, or maple syrup (honey preferred to mellow tang)
  • 2 tablespoons chia seeds

Instructions

  1. Combine Ingredients: In a medium saucepan, add raspberries, lemon juice, and honey. Bring the mixture to a boil over medium-low heat.
  2. Cook Berries: Cook for about 3 to 5 minutes until the berries are warmed through and release their juices.
  3. Crush Berries: Remove the pan from heat and use a fork to crush the berries to your desired jam texture.
  4. Add Chia Seeds: Stir in the chia seeds thoroughly.
  5. Let Jam Rest: Allow the mixture to sit for 5 minutes, stir again, then let it sit for another 5 minutes. This prevents chia seeds from clumping and helps the jam thicken.
  6. Adjust Sweetness: Taste the jam and, if desired, stir in an additional tablespoon of honey to enhance sweetness.
  7. Cool and Store: Transfer the jam to an airtight container and refrigerate. The jam will continue to thicken as it cools and should be stored for up to one week.

Notes

  • The jam thickens significantly as it cools, so do not worry if it seems runny when warm.
  • This recipe has not been tested for canning; however, it freezes well and can be thawed and stirred before use.
  • Perfect for spreading on toast, mixing into yogurt or oatmeal, or using in peanut butter & jelly sandwiches.
  • For a more mellow flavor, honey is preferred over maple syrup.
