Noodles and Sauce
- 4.90 oz soba noodles (aka buckwheat noodles, dry)
- 4 tsp perilla oil (or substitute with sesame oil)
- 1 tbsp regular soy sauce (or light soy sauce / low-sodium soy sauce)
- 1 tsp white granulated sugar (or cane sugar)
Garnishes
- 1/4 cup Korean roasted seaweed flakes (do not skip; see Notes for substitutes)
- 1/2 tsp sesame seeds
- 2 tbsp green onion (finely chopped)
- 1 Cheongyang chili pepper (chopped)
- Prepare the Sauce: In a medium-sized mixing bowl, combine the soy sauce, perilla oil, and sugar. Stir well until the sugar is fully dissolved, forming the flavorful noodle sauce. Set this aside for later.
- Cook the Noodles: Bring a medium pot filled halfway with water to a boil over high heat. Add the buckwheat noodles and cook according to the package instructions. If there are no instructions, reduce the heat to low-medium and cook for 2-3 minutes until the noodles are chewy and tender.
- Rinse and Drain: Once cooked, strain the noodles and rinse them under cold running water until they are fully cooled. Drain well and shake out any excess water to prevent sogginess.
- Combine Noodles and Sauce: Transfer the cooled noodles into the bowl with the noodle sauce. Add the roasted seaweed flakes and toss everything thoroughly to coat the noodles evenly with the sauce and seaweed.
- Garnish and Serve: Optionally garnish with sesame seeds, finely chopped green onions, additional roasted seaweed flakes, and the chopped Cheongyang chili pepper to add color and a spicy kick. Serve immediately and enjoy!
Notes
- If Korean roasted seaweed flakes are unavailable, you can substitute with toasted nori sheets torn into small pieces or crushed seaweed snacks, but the authentic flavor might be slightly different.
- Perilla oil can be substituted with sesame oil for a similar, albeit less unique, nutty flavor.
- Adjust the amount of chili pepper according to your preferred spice level.
