Overnight Oats

  • ½ cup rolled oats
  • ½ cup plus 1 Tbsp chocolate protein drink (or ½ cup plus 1 Tbsp milk and about 2 Tbsp chocolate protein powder)
  • 1 heaping tsp cocoa powder
  • 1 tsp chia seeds (optional)
  • 12 tsp maple syrup (adjust to taste)
  • 2 Tbsp Greek yogurt (vanilla or plain)
  • ½ tsp vanilla extract
  • 23 cranks sea salt

Magic Shell Topping (Optional)

  • 1 tbsp chocolate chips
  • ½ tsp coconut oil

Instructions

  1. Combine Ingredients: Add all the ingredients for the overnight oats — rolled oats, protein drink or milk with protein powder, cocoa powder, chia seeds if using, maple syrup, Greek yogurt, vanilla extract, and sea salt — into a small bowl or jar. Stir thoroughly to mix everything evenly.
  2. Prepare Magic Shell (Optional): If you want to add the magic shell topping, refrigerate the oats for about an hour to let them start setting. Meanwhile, melt the chocolate chips and coconut oil together in the microwave, heating in 15-second increments and stirring between to avoid burning.
  3. Apply Magic Shell: Pour the melted chocolate mixture over the top of the chilled oats to create a thin, crunchy chocolate shell. Cover and seal the container, then refrigerate for at least 4-6 hours, preferably overnight, to allow the oats to fully absorb flavors and the magic shell to harden.
  4. No Magic Shell Option: If not using the magic shell, simply refrigerate the oat mixture for 4-6 hours or overnight. Before serving, give the oats a good stir and add an extra splash of milk if desired. The oats can be enjoyed warm or cold.
