Scale

Dry Ingredients

  • 1 cup (120g) all-purpose flour
  • 1 cup (80g) quick-cooking oats (rolled oats can be used)
  • 1 cup (200g) granulated sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon

Wet Ingredients

  • ½ cup avocado oil (or other neutral oil)
  • 2 large lightly beaten eggs
  • 1 ½ cups (345g) mashed bananas (34 ripe bananas)
  • ¼ cup milk
  • 1 teaspoon pure vanilla extract

Optional Additions

  • ¾ cup (90g) chopped pecans or walnuts
  • 1 cup (180g) semi-sweet chocolate chips

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350ºF (175ºC). Grease or line a 9×5-inch loaf pan with parchment paper and set it aside to prepare for baking.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, quick-cooking oats, granulated sugar, baking soda, salt, and ground cinnamon until evenly combined.
  3. Combine Wet Ingredients: In a separate bowl or directly into the dry ingredients, gently stir in the avocado oil, lightly beaten eggs, mashed bananas, milk, and pure vanilla extract. Mix just until combined, avoiding overmixing to keep the bread tender. Fold in your optional chopped nuts or chocolate chips if using.
  4. Fill the Pan: Pour the batter into the prepared loaf pan. You may sprinkle additional oats, chocolate chips, or nuts on top for added texture and appearance.
  5. Bake: Place the loaf pan in the preheated oven and bake for 50 to 60 minutes. Check doneness by inserting a toothpick into the center; it should come out mostly clean with a few moist crumbs but no wet batter.
  6. Cool: Allow the bread to rest in the pan for 20 minutes to set. Then remove it from the pan and let the banana oat bread cool completely on a wire rack before slicing and serving.

Notes

  • You can substitute rolled oats if quick-cooking oats are unavailable, but texture may vary slightly.
  • Using ripe bananas with brown spots ensures maximum sweetness and moisture.
  • For a dairy-free option, substitute milk with almond milk or another plant-based milk.
  • Adjust sugar based on sweetness of bananas or your preference.
  • Optional nuts or chocolate chips add flavor and texture but can be omitted for a simpler loaf.
  • Ensure not to overmix the batter to keep the bread soft and tender.
