Instructions

  1. Make the Meringue: Beat the egg whites and cream of tartar until they reach soft peaks. Gradually add granulated sugar and continue beating until stiff, glossy peaks form, ensuring a stable and airy meringue.
  2. Fold Dry Ingredients: Sift together almond flour and 1 cup of powdered sugar to prevent lumps. Gently incorporate this mixture into the meringue using a gentle J-fold motion to keep the mixture light and prevent deflating the air bubbles.
  3. Pipe Rounds: Transfer the meringue mixture to a piping bag fitted with a round tip and pipe 2-inch rounds onto parchment-lined baking sheets. Dust the rounds twice with the remaining powdered sugar to create a beautiful crackled finish.
