Cluster Base
- 1 cup fresh blueberries
- 1/2 cup chopped walnuts
- 3/4 cup 2-5% vanilla Greek yogurt
Chocolate Coating
- 1 1/2 cups dark chocolate chips
- 3 tablespoons coconut oil
Topping
- A sprinkle of flaky sea salt
- Prepare the Blueberry Yogurt Mixture: Line a baking sheet with parchment paper to prevent sticking. In a medium bowl, combine the fresh blueberries, chopped walnuts, and vanilla Greek yogurt until well mixed to form the base of the clusters.
- Form and Freeze the Clusters: Using a spoon, scoop out about 2 tablespoons of the blueberry yogurt mixture for each cluster. Place them spaced apart onto the prepared baking sheet. Freeze for 1 to 1.5 hours until the clusters are firm.
- Melt the Chocolate Coating: About 10 minutes before the clusters are done freezing, melt the dark chocolate chips and coconut oil in a microwave-safe bowl. Heat in 30-second intervals, stirring between each, until the mixture is smooth. Let it cool for 5 minutes so it’s not too hot for dipping.
- Coat the Clusters with Chocolate: Remove the frozen clusters from the freezer. Using two forks, carefully dip each cluster into the melted chocolate, fully coating it. Place the coated clusters back onto the parchment-lined baking sheet and sprinkle with flaky sea salt if desired.
- Set the Chocolate and Store: Return the coated clusters to the freezer or refrigerator for 10 minutes to allow the chocolate to harden. Enjoy immediately or store leftovers in an airtight container in the refrigerator for up to one week. If stored in the freezer, allow clusters to thaw slightly before eating as the yogurt will become very hard.
Notes
- Use Greek yogurt with 2-5% fat to ensure creaminess without excess fat.
- Make sure the chocolate is not too hot before dipping to prevent melting the yogurt clusters.
- Store clusters in the refrigerator for a softer texture or in the freezer for longer storage but expect them to be much harder.
- Feel free to substitute walnuts with pecans or almonds if preferred.
- Dark chocolate with at least 70% cocoa is recommended for a rich and slightly bitter contrast to the sweet clusters.
