  • 8 oz lasagna noodles, broken into pieces
  • Salt and pepper to taste

Instructions

  1. Cook the sausage: In a large pot over medium heat, cook the Italian sausage until browned, breaking it apart with a spoon as it cooks. Once browned, remove the sausage from the pot and set it aside.
  2. Sauté onions and garlic: Using the same pot, add the chopped onion and minced garlic. Sauté until soft and fragrant, about 3 minutes.
  3. Add broth and beans: Pour in the chicken broth and add the drained white beans. Bring the mixture to a boil, then reduce the heat to a simmer.
  4. Add creamy ingredients and greens: Stir in the heavy cream, chopped spinach, ricotta cheese, shredded mozzarella, and grated Parmesan cheese. Continue to simmer for about 5 minutes, stirring occasionally to combine the cheeses thoroughly.
  5. Cook the noodles: Add the broken lasagna noodles to the soup. Cook until the noodles are tender, approximately 10 minutes.
  6. Return sausage and season: Put the cooked sausage back into the pot and simmer for another 5 minutes. Season the soup with salt and pepper to taste.
  7. Serve: Ladle the soup into bowls and top with additional grated Parmesan cheese if desired. Serve warm and enjoy!
