  • 1 large egg
  • 2 tablespoons melted butter (plus more for cooking)
  • 1 teaspoon vanilla extract

Instructions

  1. Dry Ingredients: In a bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
  2. Wet Ingredients: In another bowl, whisk buttermilk, egg, melted butter, and vanilla.
  3. Gently mix wet and dry ingredients until just combined (lumps are fine). Let rest 5 minutes for extra fluffiness.
  4. Heat a buttered nonstick skillet or griddle over medium heat. Pour ¼ cup batter per pancake. Cook until bubbles form and edges are set (2–3 minutes), then flip and cook another 1–2 minutes.
  5. Serve warm.
