A fun and festive Turkey Veggie Tray perfect for holiday gatherings or kids’ parties. This healthy appetizer features colorful fresh vegetables arranged creatively to look like a turkey, served with a tasty vegetable dip.

  • 1 ½ cups mini carrots or carrots peeled and cut to 1 ½ inches
  • 5 celery stalks
  • 1 large red bell pepper
  • 1 large English cucumber or 2 regular cucumbers
  • 2 candy eyeballs or use black olives for eyes

Dip

  • 1 ½ cups vegetable dip

Instructions

  1. Prepare the serving platter: Line a round platter with parchment paper and place the vegetable dip in a small bowl positioned at the bottom center of the platter.
  2. Prepare the red bell pepper: Slice off the bottom of the red bell pepper and set this piece aside to create the turkey’s face. Cut the remaining pepper into thin strips to use as part of the feathers.
  3. Trim and cut celery: Trim the celery stalks and cut them into pieces approximately the same length as the red pepper strips.
  4. Slice cucumbers: Slice the cucumbers into thin rounds to layer as the base feathers.
  5. Make the carrot beak: Cut a small tip from a carrot and shape it into a “V” to resemble a turkey beak.
  6. Assemble the feathers: Start layering cucumber slices in overlapping rows above the dip bowl to form the base feather layer.
  7. Add more feathers: On top of the cucumbers, alternate rows of celery pieces and red pepper strips to create a colorful feather pattern.
  8. Finish the feathers: Arrange a ring of carrot sticks starting at the edge of the dip bowl, overlapping the celery and pepper layers to complete the feather look.
  9. Create the turkey face: Attach the carrot beak and the candy eyeballs (or black olives) onto the reserved red pepper piece using a small amount of vegetable dip as glue.
  10. Position the face: Place the assembled turkey face above the dip bowl so it slightly overlaps the top edge, completing the turkey veggie arrangement.

Notes

  • Use black olives if candy eyeballs are unavailable for a natural look.
  • Substitute the vegetable dip with any preferred hummus or yogurt-based dip.
  • Make sure vegetables are fresh and crisp for best presentation.
