Instructions

  1. Preheat the Oven: Preheat your oven to 450°F. Line a baking sheet with foil and lightly grease it with oil or cooking spray to prevent sticking. You can also use parchment paper as an alternative.
  2. Cook the Ground Beef: Heat a skillet over medium-high heat. Add the ground beef, breaking it apart as it cooks. Continue cooking until the beef is fully browned and no longer pink. Drain off any excess fat to keep it lean.
  3. Season the Beef: Sprinkle the taco seasoning over the cooked beef and add ½ cup water. Bring the mixture to a low boil, then reduce the heat and let it simmer, stirring occasionally until the sauce thickens and most of the liquid is absorbed.
  4. Add Black Beans: Stir in the drained and rinsed black beans to the beef mixture. Cook for an additional 5 minutes until heated through, then remove from heat to prevent overcooking.
  5. Bake the Tater Tots: Arrange the tater tots in a single layer on the prepared baking sheet. Bake in the preheated oven for 20 minutes. After 20 minutes, flip the tots to ensure even crisping, then bake for another 10 minutes or until they are golden brown and crispy.
  6. Add Cheese and Meat Mixture: Remove the tater tots from the oven. Evenly sprinkle shredded cheddar cheese over the hot tots, then spoon the seasoned beef and black bean mixture on top.
