Meatloaf Mixture:

  • 2 lbs ground chicken
  • 1 cup panko bread crumbs

  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup chopped fresh parsley
  • ¼ cup chicken broth
  • 2 tablespoons butter, melted
  • 1 tablespoon garlic powder

Instructions

  1. Combine the Wet Ingredients: In a large mixing bowl, gently whisk together the milk and lightly beaten eggs.
  2. We want to make sure the eggs are well incorporated into the milk, creating a smooth and even mixture. This will help bind the meatloaf together and keep it moist.

  3. Add the Dry Ingredients: Now, add the panko bread crumbs, Parmesan cheese, Italian seasoning, salt, and pepper to the wet ingredients.
  4. Mix everything together until just combined. Be careful not to overmix at this stage, as overmixing can lead to a tough meatloaf. We want a light and tender texture.

  5. Sauté the Garlic: Heat the olive oil in a small skillet over medium heat. Add the minced garlic and sauté for about 1-2 minutes, or until fragrant.
