This Mac and Cheese Meatloaf Casserole is the ultimate comfort food mashup that combines the flavors of classic meatloaf with creamy macaroni and cheese in one delicious dish.

Ingredients

For the Meatloaf:

  • Ground Beef: 1 lb
  • Onion: 1/2 cup, diced
  • Breadcrumbs: 1/2 cup
  • Egg: 1 large
  • Milk: 1/4 cup
  • Salt: 1 tsp
  • Pepper: 1/2 tsp

For the Macaroni and Cheese:

  • Macaroni: 2 cups, uncooked
  • Cheddar Cheese: 2 cups, shredded
  • Butter: 2 tbsp
  • Flour: 2 tbsp
  • Milk: 2 cups
  • Salt: 1/2 tsp
  • Pepper: 1/4 tsp
  • Paprika: 1/2 tsp
  • Dry Mustard: 1/2 tsp

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Prepare Meatloaf: In a bowl, combine ground beef, onion, breadcrumbs, egg, milk, salt, and pepper. Mix well and press into the bottom of a greased 9×13-inch baking dish.
  3. Bake Meatloaf: Bake for 20 minutes.
  4. Cook Macaroni: While the meatloaf is baking, cook macaroni according to package directions. Drain and set aside.
  5. Make Cheese Sauce: In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in milk and cook until thickened. Stir in salt, pepper, paprika, dry mustard, and 1 1/2 cups of cheese until melted.
  6. Combine: Stir cooked macaroni into cheese sauce. Pour over partially cooked meatloaf. Sprinkle remaining cheese on top.
  7. Bake Again: Return to oven and bake for an additional 25 minutes or until cheese is melted and bubbly.
