Pie Crust:

Peach Filling:

  • 5 cups sliced peaches (sliced about 1/2 inch thick)
  • 1 egg, beaten
  • 1 tablespoon lemon juice
  • 1/4 cup all-purpose flour
  • 1/4 cup cornstarch
  • 3/4 cup white sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons cold butter

Instructions

  1. Preheat the oven: Preheat the oven to 450 degrees Fahrenheit.
  2. Prepare the peaches: In a large bowl, combine the sliced peaches and lemon juice. Drain the peaches in a colander for 10-15 minutes to remove excess juice.
  3. Prepare the crust: Place one pie crust in a 9-inch pie pan. Brush the crust with beaten egg to prevent sogginess.
  4. Make the filling: In a medium bowl, mix flour, cornstarch, sugars, cinnamon, and salt. Fold in the drained peaches.
  5. Assemble the pie: Pour the peach mixture into the crust, dot with butter, and cover with the top crust. Brush with beaten egg and vent with slits. Optionally, sprinkle sugar on top.
