Cake:
- 1 1/2 cups bananas, mashed, ripe
- 2 teaspoons lemon juice
- 3 cups flour
- 1 1/2 teaspoons baking soda
- 1/4 teaspoon salt
- 3/4 cup butter, softened
- 2 1/8 cups sugar
- 3 large eggs
- 2 teaspoons vanilla
- 1 1/2 cups buttermilk
Frosting:
- 1/2 cup butter, softened
- 1 (8 ounce) package cream cheese, softened
- 1 teaspoon vanilla
- 3 1/2 cups icing sugar
- Preheat your oven to 275°F (135°C). Grease and flour a 9 x 13-inch pan.
- Mix mashed bananas with lemon juice in a small bowl and set aside.
- Combine flour, baking soda, and salt in a medium bowl and set aside.
- Cream 3/4 cup butter and 2 1/8 cups sugar in a large bowl until light and fluffy.
- Beat in the eggs, one at a time, then stir in 2 teaspoons of vanilla.
