Cake:

  • 1 1/2 cups bananas, mashed, ripe
  • 2 teaspoons lemon juice
  • 3 cups flour
  • 1 1/2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 3/4 cup butter, softened
  • 2 1/8 cups sugar
  • 3 large eggs
  • 2 teaspoons vanilla
  • 1 1/2 cups buttermilk

Frosting:

  • 1/2 cup butter, softened
  • 1 (8 ounce) package cream cheese, softened
  • 1 teaspoon vanilla
  • 3 1/2 cups icing sugar

Instructions

  1. Preheat your oven to 275°F (135°C). Grease and flour a 9 x 13-inch pan.
  2. Mix mashed bananas with lemon juice in a small bowl and set aside.
  3. Combine flour, baking soda, and salt in a medium bowl and set aside.
  4. Cream 3/4 cup butter and 2 1/8 cups sugar in a large bowl until light and fluffy.
  5. Beat in the eggs, one at a time, then stir in 2 teaspoons of vanilla.
  6. Beat in the flour mixture alternately with the buttermilk. Stir in the banana mixture.
  7. Pour the batter into the prepared pan and bake for one hour or until a toothpick inserted into the center comes out clean.
  8. Remove the cake from the oven and place it in the freezer for 45 minutes to keep it moist.
  9. For the frosting:
    • Cream the butter and cream cheese until smooth.
    • Beat in 1 teaspoon vanilla. Add the icing sugar and beat until smooth.
    • Spread the frosting on the cooled cake.
  10. Sprinkle chopped walnuts or decorative hearts over the frosting, if desired.
