  • 1 can (15 oz) pinto beans, undrained
  • 1 can (15.2 oz) whole kernel corn, undrained
  • 1 can (15.5 oz) diced tomatoes with green chiles, undrained
  • 2 cups potatoes, diced
  • 1 package (5 oz) frozen mixed veggies

Liquids & Spices

  • 1 ½ cups water
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • ½ teaspoon red chili flakes
  • Salt and pepper to taste

Instructions

  1. Brown the Meats: In a large pot over medium heat, add the lean ground beef, finely chopped onion, and minced garlic. Cook while breaking up the ground beef with a spoon until the meat is browned and onions are translucent, approximately 5-7 minutes.
  2. Add Kielbasa: Stir in the sliced kielbasa pieces to the browned meat mixture and cook for an additional 3-4 minutes to combine flavors.
  3. Add Liquids and Vegetables: Pour in 1 ½ cups of water and the drained diced tomatoes. Then add the undrained pinto beans, diced potatoes, whole kernel corn, frozen mixed veggies, and undrained diced tomatoes with green chiles to the pot. Stir to combine all the ingredients evenly.
  4. Season the Stew: Sprinkle in the ground cumin, dried oregano, paprika, chili powder, and red chili flakes. Stir thoroughly to distribute the spices evenly throughout the stew.
  5. Simmer: Reduce the heat to low, cover the pot, and let the stew simmer gently for 1 hour. Stir occasionally to prevent sticking and to meld the flavors together.
  6. Adjust Seasoning and Serve: After simmering, taste the stew and add salt and pepper as needed to suit your preference. Remove from heat and serve hot.
