Scale

Main Ingredients

  • Cooking spray
  • 1 medium yellow onion, diced
  • 1 large green bell pepper, diced
  • 1 lb ground breakfast sausage
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon fine salt, divided
  • ½ teaspoon black pepper, divided
  • 6 slices cooked bacon, chopped, divided
  • 2 cups shredded Colby-Cheddar or Colby-Jack cheese, divided
  • 6 eggs
  • 1 ¼ cups milk of choice (2% recommended)
  • 1 (28-ounce or two 16-ounce) package frozen tater tots or crispy crowns

Optional for Serving

  • Sour cream
  • Sliced green onions
  • Hot sauce
  • Additional cooked chopped bacon

Instructions

  1. Preheat and Prepare Baking Dish: Preheat the oven to 400°F. Mist a 9×13-inch baking dish with cooking spray and set aside to prevent sticking.
  2. Cook Sausage and Vegetables: Heat a large skillet or Dutch oven over medium-high heat. Once hot, mist the surface with cooking spray. Add the diced onion, diced green bell pepper, and ground breakfast sausage. Cook while stirring occasionally until vegetables are crisp-tender and sausage is fully cooked, about 8-10 minutes. Season with garlic powder, Italian seasoning, ½ teaspoon salt, and ¼ teaspoon black pepper, stirring to combine.
  3. Add Bacon and Transfer to Baking Dish: Stir in 4 slices of the chopped cooked bacon into the sausage and vegetable mixture. Then transfer this mixture evenly into the prepared baking dish.
  4. Incorporate Cheese and Tater Tots: Add 1 cup of shredded cheese and the entire package(s) of frozen tater tots to the baking dish. Toss gently until all ingredients are well mixed and spread evenly over the sausage and vegetables.
  5. Prepare Egg Mixture: In a medium bowl or large glass measuring cup, whisk together the 6 eggs and 1 ¼ cups of milk until smooth. Season with the remaining ½ teaspoon salt and ¼ teaspoon black pepper.
  6. Pour Egg Mixture Over Casserole: Pour the egg and milk mixture evenly over the ingredients in the baking dish, ensuring it seeps between the tater tots and layers.
  7. Add Final Cheese and Bacon Toppings: Sprinkle the remaining 1 cup of shredded cheese over the top, followed by the last 2 slices of chopped cooked bacon.
  8. Bake the Casserole: Place the casserole in the preheated oven and bake for 25-35 minutes until the center is set and the top is lightly browned. Start checking from 25 minutes to avoid overcooking.
  9. Optional Broil for Crispiness: For an extra crispy topping, turn the oven broiler to High and broil the casserole top for 1-2 minutes, watching closely to prevent burning.
  10. Serve and Garnish: Let the casserole cool slightly before serving. Garnish individual servings with sour cream, sliced green onions, hot sauce, or additional bacon as desired for extra flavor.

Notes

  • Use 2% milk for best balance of creaminess and not too rich; whole milk will yield a richer casserole.
  • Frozen tater tots can be substituted with crispy crowns or homemade tater tots.
  • Adjust seasoning to taste, especially salt and pepper, based on sausage saltiness.
  • For a lower fat version, use turkey sausage and reduced fat cheese.
  • Leftovers keep well covered in refrigerator for up to 3 days and can be reheated in the oven or microwave.
  • Consider adding diced mushrooms or spinach for a veggie boost.
