  • 1 cup warm milk (about 100˚F)
  • 1/2 tablespoon active dry yeast
  • 4 tablespoons granulated sugar, divided
  • 3 1/4 cups all-purpose flour, divided (plus extra for dusting)
  • 1 egg, at room temperature
  • 1 tablespoon unsalted butter, melted
  • 1/2 teaspoon salt
  • 1 egg, beaten (for egg wash)

For the Cherry Filling:

  • 1 pound sweet red cherries, pitted
  • 1/4 cup granulated sugar (1/2 teaspoon for each bun)

For the Crumb Topping:

  • 4 tablespoons unsalted butter, cold and diced
  • 1 tablespoon granulated sugar
  • 1/2 cup all-purpose flour

Instructions

  1. Prepare the Dough: In the bowl of an electric mixer, combine warm milk, yeast, and 1 tablespoon of sugar. Let sit for 5–7 minutes until frothy. Stir in 1/2 cup flour and another tablespoon of sugar. Mix until smooth, then let rise in a warm place. Add the egg, remaining sugar, melted butter, and salt. Mix to combine. Gradually add the remaining flour and knead until smooth.
  2. Shape the Buns: Divide the dough, shape into balls, and arrange in a baking dish. Press a well into each ball.
  3. Assemble the Filling: Place cherries and sugar in each well. Let rise until puffy.
  4. Prepare the Crumb Topping: Mix butter, sugar, and flour until crumbly.
  5. Bake the Buns: Brush with egg wash, sprinkle with crumb topping, and bake until golden brown.
