Sweet & Savory Honey Beef with Roasted Potatoes is a delightful combination of tender marinated beef infused with honey, soy sauce, garlic, and ginger flavors, paired perfectly with crispy, herb-seasoned roasted baby potatoes. This comforting dish is easy to prepare and makes for a delicious weeknight dinner or special occasion meal.

Ingredients

Scale

For the Beef:

  • 2 lbs beef (sirloin or flank steak)
  • ¼ cup honey
  • ¼ cup soy sauce
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tsp black pepper
  • 1 tsp salt

For the Potatoes:

  • 2 lbs baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp dried rosemary or thyme
  • Salt and pepper to taste

Instructions

  1. Marinate the Beef: In a bowl, whisk together honey, soy sauce, minced garlic, grated ginger, black pepper, and salt. Add the beef and toss to coat well. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight to enhance the flavors.
  2. Prepare Potatoes: Preheat the oven to 400°F (200°C). In a separate bowl, toss the halved baby potatoes with olive oil, dried rosemary or thyme, salt, and pepper until evenly coated.
  3. Combine and Roast: Spread the marinated beef on a baking sheet, arranging the seasoned potatoes around the beef. Place in the oven and roast for 30-35 minutes, stirring the potatoes halfway through for even cooking and browning.
  4. Rest and Serve: Remove from the oven and let the beef rest for 5-10 minutes before slicing. Serve the sliced beef alongside the roasted potatoes, drizzling with any remaining pan juices for extra flavor.

Notes

  • For best flavor, marinate the beef overnight.
  • Use a meat thermometer to ensure the beef reaches your desired doneness; 130°F for medium-rare, 140°F for medium.
  • Baby potatoes can be swapped with fingerling potatoes or small Yukon golds.
  • Fresh herbs can be used instead of dried for a more vibrant flavor.
  • If soy sauce is a concern, use a low-sodium version to reduce salt intake.
  • This dish pairs well with a green salad or steamed vegetables for a complete meal.
