Sago Pearls
Strawberry Mixture
- 2 lbs strawberries (washed and stems removed)
- 3/4 cup evaporated milk
- 3 tablespoon condensed milk (adjust to taste)
Coconut Milk
- 1 cup coconut milk (whole fat, chilled)
Garnish
- Chopped strawberry pieces (for garnish)
- Cook the sago: In a medium saucepan, bring water to a boil. Add the sago pearls and reduce the heat to medium-high. Cook, stirring occasionally, until the pearls turn transparent, about 15 minutes. Remove from heat, cover, and let it sit for 10-15 minutes until fully translucent.
- Cool the sago: Strain the cooked sago and rinse with cold water to stop the cooking process. Submerge the sieve with the sago into a bowl of cold water to prevent the pearls from drying out. Set aside.
- Blend the strawberries: In a blender, add the washed strawberries, evaporated milk, and condensed milk. Blend until smooth. Taste and add more condensed milk if a sweeter flavor is desired, then blend again. Chill this strawberry mixture in the refrigerator until ready to assemble.
- Combine ingredients: Drain the cooled sago pearls well. In a large mixing bowl, add the sago, chilled coconut milk, and the chilled strawberry mixture. Stir gently until well combined.
- Assemble and serve: Spoon the mixture into individual serving cups. Garnish with chopped fresh strawberry pieces on top. Serve immediately or chilled for a refreshing dessert experience.
Notes
- Ensure to rinse sago thoroughly after cooking to remove excess starch and prevent clumping.
- Adjust sweetness by varying the amount of condensed milk added to the strawberry blend.
- For a thicker consistency, chill the assembled dessert for an hour before serving.
- Use fresh, ripe strawberries for the best natural flavor and vibrant color.
- This dessert can be made a few hours in advance and stored in the fridge, but garnish fresh before serving.
