This Sticky Sesame Cauliflower recipe offers a deliciously crunchy and flavorful vegan dish that features crispy roasted cauliflower florets coated in a sweet and spicy sticky sesame sauce. Perfect as a healthy appetizer or a side dish, it combines Asian-inspired flavors like sesame oil, soy sauce, ginger, and garlic with a touch of heat from sriracha and sweetness from honey or maple syrup.

Ingredients

Scale

Cauliflower

  • 1 medium cauliflower, cut into florets
  • 1/3 cup rice flour
  • 1 tbsp cornstarch
  • 1 tsp oil (neutral oil such as vegetable or canola)
  • 1/2 tsp garlic powder (optional)
  • 1/41/3 cup water

Sauce

  • 1.5 tbsp sesame oil
  • 1/4 cup light soy sauce
  • 1 tbsp rice wine vinegar
  • 12 tbsp sriracha sauce (adjust to taste)
  • 1 inch fresh ginger, finely minced
  • 45 cloves fresh garlic, finely minced
  • 23 tbsp honey or maple syrup
  • 1 tbsp cornstarch
  • 1/4 cup water

Garnish

  • Sesame seeds
  • Spring onions, sliced
  • Sliced chillis

Instructions

  1. Preheat and prepare cauliflower: Preheat your oven to 200°C (392°F) and line a baking tray with foil or parchment paper to prevent sticking and aid easy cleanup.
  2. Make batter and coat: In a small bowl, whisk together rice flour, cornstarch, oil, garlic powder (optional), and water to create a smooth, thick batter. Coat each cauliflower floret thoroughly with this mixture, ensuring an even layer for crispiness.
  3. Bake cauliflower: Arrange the coated florets in a single layer on the prepared baking tray. Bake in the preheated oven for 20-25 minutes until just tender and slightly crispy. Avoid overcooking to retain a desirable crunch.
  4. Prepare the sauce: While the cauliflower bakes, combine sesame oil, soy sauce, rice wine vinegar, sriracha, minced ginger, and garlic in a small saucepan. Cook over medium heat for 5-6 minutes to meld the flavors.
  5. Thicken sauce: In a small bowl, whisk cornstarch with water to form a slurry. Gradually add this to the simmering sauce and cook for another 2-3 minutes until the sauce thickens to a sticky consistency. Remove from heat and stir in honey or maple syrup for sweetness. Adjust seasoning to taste.
  6. Toss and serve: Once the cauliflower is out of the oven, immediately toss it gently in the sticky sesame sauce until well coated. Garnish with sesame seeds, sliced spring onions, and sliced chillis for a burst of flavor and color. Serve hot and enjoy!

Notes

  • Adjust the sriracha quantity to control the heat level to your preference.
  • Using honey or maple syrup allows you to choose between a non-vegan or vegan-friendly option.
  • Rice flour provides a gluten-free coating; ensure your soy sauce is gluten-free for a fully gluten-free dish.
  • Do not overcook cauliflower to maintain crunchiness.
  • For extra crispiness, you can broil the cauliflower for the last 2 minutes, watching closely to avoid burning.
  • This dish is best enjoyed fresh but can be reheated gently in a pan to retain texture.
