  • 2 cups diced potatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

For Topping:

  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Sauté Onions and Garlic: In a large skillet, heat olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent.
  3. Cook Ground Beef: Add the ground beef to the skillet, cooking until browned and fully cooked. Drain any excess fat.
  4. Add Peppers and Potatoes: Stir in the diced red, yellow, and green bell peppers, along with the diced potatoes. Cook for about 5 minutes to soften the vegetables.
  5. Season the Mixture: Season with ground cumin, chili powder, salt, and pepper, stirring to combine.
  6. Transfer to Baking Dish: Transfer the beef and vegetable mixture to a baking dish, spreading it evenly.
  7. Add Cheese and Bake: Sprinkle the shredded cheddar cheese over the top. Bake for 25-30 minutes until potatoes are tender and cheese is melted and golden brown.
