4.7 from 136 reviews

Delight in these light and fluffy Snowball Donuts, a healthier twist on a classic treat. Made with simple ingredients like milk, vinegar, oil, and spelt or oat flour, these mini donuts are baked to perfection and coated in a dusting of powdered sugar. Perfect for a quick breakfast or snack, they offer a soft texture and a subtle sweetness without the heaviness of traditional fried donuts.

Ingredients

Scale

Wet Ingredients

  • 2/3 cup milk of choice
  • 1 1/2 tsp white or cider vinegar
  • 2 1/2 tbsp oil (or banana, applesauce, or almond butter for oil-free option)
  • 1 tsp pure vanilla extract

Dry Ingredients

  • 1 cup spelt, white, or oat flour
  • 1 1/2 tsp baking powder
  • 1/2 cup sugar (or xylitol for sugar-free option)
  • 1/4 tsp salt

Topping

  • Powdered sugar or sugar-free powdered sugar

Instructions

  1. Mix Wet Ingredients: In a small bowl, whisk together the milk, vinegar, oil, and vanilla extract until well combined.
  2. Prepare Donut Pan and Oven: Preheat your oven to 350°F (175°C) and grease a mini or regular donut pan, or alternatively a mini muffin tin, to prevent sticking.
  3. Combine Dry Ingredients: In a large bowl, mix the flour, baking powder, sugar, and salt until evenly distributed.
  4. Combine Wet and Dry: Pour the wet ingredient mixture into the dry ingredients and stir gently until just combined; avoid overmixing to keep the donuts tender.
  5. Fill the Pan: Immediately pour the batter into the prepared donut pan, filling each cavity suitably but not overflowing.
  6. Bake: Place the pan in the oven and bake for 8 minutes, or until the donuts are lightly golden and a toothpick inserted comes out clean.
  7. Cool and Remove: Allow the donuts to cool completely in the pan before carefully removing them to avoid breaking.
  8. Coat with Powdered Sugar: Pour powdered sugar into a deep bowl and either dip each donut into the sugar or sprinkle it over the tops to give the signature snowy finish.

Notes

  • For an oil-free version, substitute oil with mashed banana, applesauce, or almond butter.
  • Use xylitol instead of sugar for a sugar-free version suitable for diabetics.
  • Ensure not to overmix the batter to keep the texture light and fluffy.
  • Donuts should be fully cooled before coating in powdered sugar to prevent melting.
  • Mini donut pans produce perfect bite-sized treats; regular-sized pans will require slightly longer baking times.
