For the Cookie Dough:

  • 1/2 cup (8 Tbsp; 113g) unsalted butter, softened
  • 3/4 cup (150g) packed light or dark brown sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup (125g) all-purpose flour (spooned & leveled)
  • 1 cup (120g) graham cracker crumbs
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Additional Ingredients:

  • 1 cup (180g) semi-sweet chocolate chips
  • 1 heaping cup marshmallow creme

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (177°C) and line a baking pan with parchment paper.
  2. Mix Cookie Dough: Cream butter and sugar, add egg and vanilla. Mix dry ingredients separately, then combine with wet ingredients.
  3. Layer: Press 2/3 of dough into the pan, add marshmallow creme, chocolate chips, and remaining dough on top.
  4. Bake: Bake for 25-30 minutes until golden brown. Cool completely.
  5. Serve: Cut into squares and store leftovers at room temperature.
