Smashed Carrots is a simple and flavorful side dish that takes ordinary carrots to a whole new level. Roasted to perfection with Parmesan and spices, these smashed carrots are a tasty addition to any meal.

  • 1 lb carrots, peeled and cut into thick rounds
  • 1 tbsp olive oil
  • 2 tbsp grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Boil carrots: Boil the carrot rounds in salted water for 10–12 minutes until fork-tender. Drain and let cool slightly.
  3. Smash carrots: Place the carrots on the baking sheet and gently flatten each with the bottom of a glass or measuring cup.
  4. Season carrots: Drizzle the carrots with olive oil, then season with garlic powder, paprika, salt, and pepper. Sprinkle Parmesan evenly on top.
  5. Roast carrots: Roast the carrots for 20–25 minutes, flipping halfway through, until they are crisp and golden brown.
  6. Garnish and serve: Garnish with chopped parsley and serve hot for the best texture.
