Ingredients

Scale

Slow Cooker Mexican Chicken

  • 22.5 lbs skinless boneless chicken breast
  • 16 oz chunky salsa
  • 1/3 cup BRIANNAS Cilantro Lime Dressing (plus more for drizzle)
  • 1/2 cup chicken broth
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika

Other Ingredients for the Bowl

  • 4 cups cooked rice
  • 2 cups frozen sweet corn
  • 1 (16 oz) canned black beans, low sodium
  • 3 small avocados
  • 1/4 cup chopped cilantro
  • 1 lime

Instructions

  1. Cook Chicken: Add all Slow Cooker Mexican Chicken ingredients to the slow cooker. Set on high and cook for 4 hours until the chicken is fully cooked and tender.
  2. Shred Chicken: Remove chicken breasts and shred them with forks; they should come apart easily. Return shredded chicken to the slow cooker and let it cook/sit for an additional 10 minutes to absorb flavors. Add salt to taste if desired.
  3. Prepare Bowl Ingredients: While the chicken is cooking, prepare other bowl components: cook rice according to package instructions, heat frozen corn and black beans in the microwave until warmed through, chop cilantro, dice avocados, and cut the lime into wedges.
  4. Assemble Bowls: In each serving bowl, add a base of cooked rice, then top with shredded chicken, corn, black beans, and diced avocado.
  5. Garnish and Serve: Garnish with chopped cilantro and lime wedges. Drizzle with additional BRIANNAS Cilantro Lime Dressing for extra flavor. Serve immediately and enjoy your homemade Slow Cooker Chicken Burrito Bowl!

Notes

  • You can use white, brown, or cilantro-lime rice depending on your preference for the base of the bowl.
  • If desired, add additional toppings such as shredded cheese, sour cream, or jalapeños for extra flavor and texture.
  • The salsa choice can be mild or spicy according to your taste.
  • To make this dish quicker, use leftover cooked chicken or rotisserie chicken instead of cooking in the slow cooker.
  • Adjust seasoning and salt as needed depending on the sodium content of your salsa and broth.
