Ingredients

Scale

For the Beef Brisket:

  • 3 Tbsp olive oil, divided
  • 4 lb beef brisket
  • 2 tsp sea salt (or to taste)
  • 1 tsp freshly ground black pepper

For the Vegetables and Broth:

  • 1 lb yellow onions (2 medium), sliced into thick strips
  • 1 lb mushrooms, thickly sliced
  • 6 garlic cloves, peeled and chopped
  • 2 cups low-sodium chicken stock or beef broth
  • 2 ½ Tbsp Worcestershire sauce

Instructions

  1. Season and Sear the Brisket: Generously season the brisket with salt and pepper. Sear in a hot skillet until browned.
  2. Caramelize the Onions: Sauté the sliced onions until caramelized and place on top of the brisket.
  3. Cook the Mushrooms and Garlic: Sauté mushrooms until soft, then add garlic.
  4. Prepare the Broth: Combine chicken broth and Worcestershire sauce, then pour over the brisket and vegetables.
  5. Slow Cook the Brisket: Cook on low for 7-8 hours until tender.
  6. Shred and Serve: Shred the beef, return to the slow cooker, and serve with mushrooms and juices.

Notes

  • For added depth of flavor, you can deglaze the skillet with a bit of red wine after searing the brisket.
  • This dish is perfect for serving with mashed potatoes, rice, or crusty bread to soak up the delicious juices.
