For the Shepherd’s Pie Filling:

  • 1 pound ground beef or ground lamb
  • 1 small onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • Salt & black pepper, to taste
  • ¾ cup frozen peas

For the Mashed Potato Topping:

  • ½ cup milk
  • 2 tablespoons butter
  • ¼ teaspoon garlic powder
  • Salt & black pepper, to taste
  • ½ cup shredded cheddar cheese (optional)

Instructions

  1. Step 1: Bake the Potatoes – Preheat oven to 400°F (200°C). Scrub, dry, and prick potatoes. Rub with oil and salt, then bake until tender.
  2. Step 2: Make the Shepherd’s Pie Filling – Brown meat, add onion, carrots, garlic, seasonings, broth, and peas. Simmer until thickened.
  3. Step 3: Make the Mashed Potato Topping – Scoop out potato, mash with milk, butter, seasonings, and cheese.
  4. Step 4: Assemble the Stuffed Potatoes – Fill baked potatoes with filling and top with mashed potatoes.
  5. Step 5: Bake & Serve – Bake until golden, then serve warm.
