Caramel Mixture:
- 11 ounces Kraft individually wrapped caramels, unwrapped (311g)
- 1/4 cup heavy cream
- 1 tablespoon heavy cream
- 3 tablespoons salted butter, sliced into pats
- 1/2 teaspoon pure vanilla extract
- 2 1/2 cups salted dry roasted peanuts
Chocolate Coating:
- 3 cups milk chocolate candy wafer melts
- 1 to 2 teaspoons flaky sea salt, for garnish
- Prepare Caramel Mixture: Line baking sheets with waxed paper. Melt caramels and heavy cream in the microwave, then stir in butter and vanilla. Add peanuts and let cool.
- Form Clusters: Use a cookie scoop to form mounded tablespoons of the caramel and peanuts mixture onto prepared sheets. Chill in the refrigerator.
- Coat in Chocolate: Melt chocolate wafers, dip chilled clusters, and place them back on the sheet. Sprinkle with sea salt.
