Instructions

  1. Prepare the Pie Crust: Begin by preparing the pie crust in either a deep dish 8-inch pie pan or a 9-inch pie pan. Chill the crust in the fridge while preparing the filling.
  2. Heat the Cream Mixture: Combine cream, brown sugar, cornstarch, and salt in a saucepan. Heat until boiling, stirring constantly.
  3. Temper the Eggs: Ladle hot cream mixture into egg yolks while whisking to prevent curdling.
  4. Combine the Mixture: Mix tempered eggs back into the saucepan with remaining cream. Add honey and vanilla.
  5. Fill the Pie Crust: Pour custard mixture into chilled pie crust evenly.
  6. Bake the Pie: Bake at 375°F (190°C) for 40-45 minutes until set.
  7. Cool and Set: Cool to room temperature, then refrigerate until firm.
