  • 1 (8-ounce) goat cheese log (broken into 1-ounce chunks)

  • 1 teaspoon finely chopped fresh rosemary (plus more for serving)
  • 1 teaspoon lemon juice (from 1 lemon)

  • 2 mandarin oranges (peeled and segmented)
  • 2 tablespoons finely chopped roasted pumpkin seeds

Instructions

  1. Preheat the oven: Set your oven to 400°F (204°C) to prepare for roasting the beets.
  2. Roast the beets: Rinse and trim the beet ends, then rub them with 2 teaspoons olive oil and sprinkle with ¼ teaspoon salt on the cut sides. Wrap the beets in two separate foil packets and place them on a baking sheet. Roast for 40–50 minutes until tender when pierced with a fork.
  3. Peel and cut the beets: Once cool enough to handle, peel the skins off the beets and cut each into 1-inch wedges for easy serving.
  4. Toss beets with seasoning: Place the cut beets in a large bowl. Toss with the remaining 2 teaspoons olive oil, 1 tablespoon honey, ½ teaspoon salt, and ¼ teaspoon black pepper. Chill until you are ready to serve to let the flavors meld.
  5. Prepare the whipped goat cheese: In a small food processor or blender, combine the goat cheese chunks, Greek yogurt, 1 tablespoon honey, 1 teaspoon thyme, 1 teaspoon rosemary, and 1 teaspoon lemon juice.
  6. Whip the goat cheese: Pulse the mixture 5–10 times, then blend continuously for 10–20 seconds until smooth and creamy. Take care not to over-blend as this could make the cheese runny.
  7. Assemble the dish: Spread the whipped goat cheese evenly on a serving platter. Arrange the roasted beet wedges and mandarin orange segments on top without mixing them to avoid color bleeding.
