  • 6oz strawberries, thinly sliced (divided use)
  • 6oz raspberries, halved (divided use)

  • 10 capacity popsicle mold and sticks

Instructions

  1. Boil Water: In a medium saucepan, bring 2 ½ cups (600ml) of filtered water to a rolling boil to prepare the base for the tea infusion.
  2. Steep Tea and Fruit: Once boiling, turn off the heat and add 2 tablespoons of dried rosehips, 1 raspberry leaf tea bag, and half of the thinly sliced strawberries and halved raspberries to the saucepan. Cover and let steep for 20 minutes to infuse the flavors.
  3. Strain Tea: After steeping, strain the tea through a fine mesh strainer, pressing firmly on the solids to extract all the flavorful liquid, ensuring a smooth base without any residue.
  4. Add Honey: Stir in 3 tablespoons (66ml) of raw honey until it is completely dissolved, sweetening the infusion naturally.
  5. Fill Popsicle Molds: Pour the tea mixture halfway into each of the 10 popsicle molds. Then, distribute the remaining sliced strawberries and raspberries evenly inside each mold for a visually appealing and flavorful addition.
  6. Top Off and Insert Sticks: Fill the rest of the popsicle molds with the remaining tea mixture. Insert popsicle sticks into each mold securely.
  7. Freeze: Place the filled molds into the freezer and freeze until solid, approximately 4-6 hours, ensuring fully set popsicles ready to enjoy.
