A delightful and quick recipe for making delicious gnocchi with vegetables in a buttery sauce, topped with Parmesan and fresh basil.

Gnocchi:

  • 1 lb Gnocchi

Vegetables:

  • 4 tbsp Butter – divided
  • 2 Shallots – finely diced
  • 1 cup Corn – fresh or frozen
  • 10 oz Cherry Tomatoes
  • ½ cup Grated Parmesan or Vegetarian Alternative
  • Fresh Basil – to serve
  • Sea Salt and Black Pepper

Instructions

  1. Cook Gnocchi: Boil gnocchi according to package instructions, then drain and reserve ½ cup of cooking water.
  2. Sauté Vegetables: In a skillet, melt 2 tbsp butter and cook shallots and corn until soft. Season with salt and pepper.
  3. Add Tomatoes: Add cherry tomatoes and cook until they burst.
  4. Combine: Stir in gnocchi, reserved water, additional butter, and Parmesan to create a sauce.
  5. Adjust Seasoning: Taste and adjust seasoning as needed.
  6. Serve: Garnish with fresh basil and more cheese before serving.

Notes

  • You can customize this dish by adding other vegetables like spinach or bell peppers.
  • For a lighter version, use olive oil instead of butter.
