Spaghetti:

  • 12 oz dried spaghetti

Chicken Mixture:

  • 4 cups chopped cooked chicken
  • 1 (16-oz) container sour cream
  • 2 (10.5-oz) cans unsalted cream of chicken soup
  • 1 (10-oz) package frozen spinach, thawed and drained
  • 2 cups shredded Monterey Jack cheese, divided
  • 2 garlic cloves, minced
  • 1 (6-oz) can French’s French Fried Onions, divided

Instructions

  1. Cook the Spaghetti: Cook the spaghetti according to the package directions. Drain and set aside.
  2. Prepare the Sauce: In a large bowl, combine the sour cream, cream of chicken soup, thawed and drained spinach, and minced garlic. Stir until everything is well mixed.
  3. Combine the Ingredients: Add the chopped chicken and 1 ½ cups of the shredded Monterey Jack cheese to the sauce mixture. Stir until everything is evenly combined.
  4. Assemble the Dish: Preheat your oven to 350°F (175°C). In a large casserole dish, layer the cooked spaghetti and pour the chicken mixture over the top, spreading it evenly.
  5. Top and Bake: Sprinkle the remaining ½ cup of shredded Monterey Jack cheese and half of the French Fried Onions on top of the casserole. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  6. Finish with French Fried Onions: After baking, remove the casserole from the oven and top with the remaining French Fried Onions. Return to the oven for an additional 5 minutes to allow the onions to crisp up.
  7. Serve: Let the casserole cool for a few minutes before serving. Enjoy!
