  • 1 1/2 cups sugar
  • 1 teaspoon pure vanilla extract
  • 2 large eggs, room temperature
  • 2 cups creamy peanut butter
  • 3 cups flour
  • 1 teaspoon baking powder

For the Topping:

  • 2 cups strawberry jam

Instructions

  1. Preheat the Oven: Preheat oven to 350 degrees and line a 9×13 baking dish with parchment paper.
  2. Cream Butter and Sugar: Using a standing mixer, cream together the butter, peanut butter, and sugar until light and fluffy.
  3. Add Eggs and Vanilla: Beat in the eggs, one at a time, until combined, and then add vanilla.
  4. Combine Dry Ingredients: In a medium mixing bowl, whisk together the flour and baking powder.
  5. Combine Wet and Dry Ingredients: Gradually mix in the dry ingredients with the wet until combined.
  6. Layer the Dough: Using about 2/3 of the dough, evenly spread it onto the bottom of the baking dish.
  7. Add Jam: Spread the strawberry jam on top of the bottom layer.
  8. Add Topping: Crumble the remaining dough on top of the jam.
  9. Bake: Bake in the preheated oven for 30-35 minutes or until the top is lightly golden brown.
