Peach Cake:
- 3 eggs, beaten
- 1 ¼ cups white sugar
- ½ cup vegetable oil
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- ½ teaspoon ground cinnamon
- 2 cups peach chunks
- 1 cup pureed peaches
Cinnamon Glaze:
- 1/3 cup pureed peaches
- 1/3 cup sugar
- 1 tsp butter
- 1/4 tsp vanilla
- 3/4 tsp cinnamon
- 1/2 cup chopped pecans (optional, for topping)

- Preheat oven: Preheat oven to 375 degrees F. Grease and flour a bundt cake pan.
- Mix wet ingredients: In a large bowl, mix the eggs, sugar, & oil. Add in pureed peaches and stir until combined.
- Combine dry ingredients: In a separate bowl, whisk dry ingredients, including spices. Add the dry ingredients to the wet ingredients, stirring until well incorporated. Gently fold in the peach chunks by hand.
- Bake: Pour the batter into the prepared pan and bake for 50-60 minutes or until a toothpick inserted comes out clean. Let cool for 15 minutes before removing from the pan.
- Prepare glaze: In a small saucepan, combine all glaze ingredients except vanilla. Bring to a boil, then remove from heat. Stir in vanilla until smooth.
- Finish and serve: Allow the cake and glaze to cool for an hour. Drizzle the glaze over the cake and top with pecans and peach slices. Serve and enjoy!
