Peach Cake:

  • 3 eggs, beaten
  • 1 ¼ cups white sugar
  • ½ cup vegetable oil
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • 2 cups peach chunks
  • 1 cup pureed peaches

Cinnamon Glaze:

  • 1/3 cup pureed peaches
  • 1/3 cup sugar
  • 1 tsp butter
  • 1/4 tsp vanilla
  • 3/4 tsp cinnamon
  • 1/2 cup chopped pecans (optional, for topping)
  • peach slices (optional, for topping)

Instructions

  1. Preheat oven: Preheat oven to 375 degrees F. Grease and flour a bundt cake pan.
  2. Mix wet ingredients: In a large bowl, mix the eggs, sugar, & oil. Add in pureed peaches and stir until combined.
  3. Combine dry ingredients: In a separate bowl, whisk dry ingredients, including spices. Add the dry ingredients to the wet ingredients, stirring until well incorporated. Gently fold in the peach chunks by hand.
  4. Bake: Pour the batter into the prepared pan and bake for 50-60 minutes or until a toothpick inserted comes out clean. Let cool for 15 minutes before removing from the pan.
  5. Prepare glaze: In a small saucepan, combine all glaze ingredients except vanilla. Bring to a boil, then remove from heat. Stir in vanilla until smooth.
  6. Finish and serve: Allow the cake and glaze to cool for an hour. Drizzle the glaze over the cake and top with pecans and peach slices. Serve and enjoy!
