Ingredients

Scale

Chicken

  • 1 1/2 lb chicken breast (about 34 pieces, approx. 1 inch thick)
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1/3 cup grated Parmesan cheese
  • 1/3 cup breadcrumbs (Italian or plain, can add 1 teaspoon Italian seasoning to plain breadcrumbs)
  • 1/2 teaspoon cracked pepper
  • 1/23/4 teaspoon sea salt

Potatoes

  • 2 lb red potatoes, cut into bite-sized pieces (quartered if small, 6ths or 8ths if large)
  • 12 garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 tablespoons grated Parmesan cheese
  • Salt and pepper to taste

Green Beans

  • 1 lb fresh green beans, ends trimmed
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 1 tablespoon Parmesan cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and line a sheet pan with parchment paper or spray it with cooking oil for easy cleanup.
  2. Prepare Potatoes: In a medium bowl, toss the red potatoes with minced garlic, olive oil, Parmesan cheese, salt, and pepper until evenly coated. Spread the potatoes on one-third of the sheet pan and bake for 10-15 minutes to start roasting. For a more browned edge, opt for the full 15 minutes.
  3. Prepare Chicken: While the potatoes begin cooking, toss the chicken breasts in the same bowl with olive oil, minced garlic, Parmesan, breadcrumbs, cracked pepper, and sea salt, coating each piece thoroughly.
  4. Add Chicken and Green Beans: Remove the sheet pan from the oven and place the coated chicken breasts on another third of the pan. In the bowl, toss the green beans with olive oil, minced garlic, Parmesan (optional), salt, and pepper. Add the green beans to the remaining space on the sheet pan.
  5. Finish Baking: Return the sheet pan to the oven and bake everything together for about 25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C). For extra crispy potatoes, switch the oven to broil on high for an additional 4-5 minutes if desired.
  6. Serve: Remove the sheet pan from the oven and let rest for a few minutes before serving. Enjoy your flavorful and easy Parmesan Crusted Chicken Sheet Pan Dinner!

Notes

  • Use Italian seasoned breadcrumbs or add Italian seasoning to plain breadcrumbs for added flavor.
  • For crispier potatoes, broil at the end of cooking for 4-5 minutes, watching closely to prevent burning.
  • Trim green beans before cooking to ensure even roasting.
  • You can substitute chicken thighs if preferred, but adjust cooking times accordingly.
  • Make sure chicken reaches an internal temperature of 165°F to ensure it’s fully cooked.
